abstract = "From the point of view of the evolution of Japanese practices and sensibilities regarding food since the modernization of the country at the end of the 19th century, the great Kanto earthquake of 1923 had a major influence, which is largely underestimated. Indeed, the reconstruction of Tokyo, based on the modernization of urban space under western cultural influence, transformed the city's foodways. Taking historical documents and academic publications which study the city and its commerce as a starting point, this article shows that reconstruction after 1923 was an opportunity to totally remake the former life of Edo and entailed a separation of eating spaces according to gender, with department store restaurants for women and caf{\'e}s for men.",
